Premium Sayama Sencha from Yunomi.us

I’ve been following Yunomi.us web shop from the beginning earlier this year. It specializes on Japanese tea and tea ware from farms, master blenders, artists, and specialty manufacturers. The site contains really interesting historical information on some private tea gardens and farms etc. They just send me a sample of Premium Sayama Sencha from Morita family tea garden, started in 1868.

I’ll start with a rinse this time. This comes from radioactive Japan area, but the site reports it’s fully safe 🙂 A bit of radiation can be good for me anyway, that’s how humankind was bred.

Dry leaves are dark sparking green, some long needles.

1st steep at about 76°C for 50 sec.: Liquor color is good whitish cloudy yellow green. Ultra sweet and profound flowery (for sencha) taste. Not flat at all. Wow, this is one of the best senchas I tried. Mouth watering sweet aftertaste. Wet leaves after steep produce a very tasty sencha aroma. Beautiful green cloudy powder residue in my cup.

2nd steep at 70°C for 1 min.: Tasty bubbles in my houhin. Bright green color of leaves. Sweet again, but more sour now. Grassy. Now more similar to a regular sencha.

3rd steep at 80°C for 50 sec.: cloudy light green tasty tea soup, sour and sweet. This tea probably needs higher temperature, because now it looks better than 2nd steep. However taste is fading already. I see now its brewing instructions on the tea’s page, 90˚C advised after 1st steep at 60°C. Had to read it before.

4th steep at 90°C for 1 min.: it’s more sour now, taste is not so savory like it was before. Still nice for a summer night here.

This tea has incredible very long lasting aftertaste in the back of my mouth. First steep was so great, will remember it for a long time! Definitely must try different farm teas from this shop. I like the specific farms tea idea.
